Cornflakes Cookies

Ingredient:
- 180g plain flour (I used wholemeal flour)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 125mL sunflower oil
- 90g caster sugar
- 1 beaten egg
- 1 tsp vanilla essence
- 1 cup cornflakes
- a few tbsp of milk depending on ur liking of the dryness of the dough

Method:
- Mix flour, baking powder and baking soda together.
- Mix in sugar and cornflakes.
- Add oil, vanilla essence, egg and some milk and mix till a dough is form.
- Spoon into small balls and place on cookie trays. (Remember to leave some space between each ball, as they tend to expand when cooked.)
- Bake in preheated oven of 180C for 20 minutes.
- Allow to cool and store in an air-tight container.

The end result of the cornflakes cookies is quite chewy. Not sure is it due to the wholemeal flour used. Shall try with plain flour again and see how it goes.

The bf loves it! And I love it too! :)
