bento boxes

Yan went back to sg and i couldnt think of anything else to get her except making something out of my own hands. :)
Making cupcakes is my love.


With some fondant left, i made these for the glutton baby. :)

Making lunches is one of my daily routine and i had been looking for really cute bento boxes for some time already. But 舍不得。 Luke is so nice to get me one as a birthday present! Thank you LUKE! I think he read from my blog that i had been eyeing for bento boxes.
and baby got an advanced birthday present from him too! Heehee!! and now both of us have really cool bento boxes!!

it came with 2 layers. I am really surprised that the compact boxes can in fact hold alot of food. Here is mine!!! SO CUTE isnt it!!!!
OH!!! i really don want to use it lo. too cute to be used. :)

Apples & Cinnamon Muffins

Not very appealing picture. But they definitely taste wonderful!
I wasnt a fan of cinnamon but nv expect the muffin to taste great.

Ever sick of eating bread for breakfast everyday?
Perk ur day up with 2 muffins and a cuppa coffee or tea.
(I don take caffeine so MILO for me! :>)

Ingredient A:
- 320g plain flour
- 200g caster sugar
- 4 tsp baking powder
- 2 tsp cinnamon

Ingredient B:
- 4 tbsp vegetable oil
- 50g unsalted butter
- 2 eggs
- 175mL milk

Ingredient C:
- 2 peeled and finely diced apples.

Methods:
-Beat Ingredient B until well combined.
- Add Ingredient A a little at a time. Mix well.
- Stir in Ingredient C.
- Spoon the batter into muffin cups. (3/4 full will do the job. The muffin will HUAT.)
- Bake for 20 minutes in a 175C preheated oven.
- Allow to cool.

Store in fridge and simply heat it up the next morning!
Best to finish within 2 days to maintain freshness.

Baked cheesecake

I'm not a fan of cheese. However, the bf been craving for cheesecake these few days. So I baked these mini cheesecake.

Ingredient A:
- 62.5g digestive biscuit crumbs
- 2.5 tbsp butter

Ingredient B:
- 225g ricotta cheese
- 225g cream cheese
- 1 tsp vanilla essence
- 70g icing sugar
- 1 egg

Ingredient C:
- Strawberries / Blueberries

Method:
- Mix Ingredient A.
- Spoon tablespoon of ingredient A into mini cake cases and press firmly.
- Chill until it set.
- Mix Ingredient B and beat till smooth.
- Add the mixture to the set cases.
- Bake for 25 minutes in a preheated oven at 160C.
- Allow to cool and chill. (This is important. As when the cake is freshly out from the oven, the cake tend to collapse.)
- Serve chill with berries.

Result:
Not too cheesy. Taste is light. Excellent for people who dislike cheesy food.

However, will need to work harder for working on the base of the cake.

Vanilla cupcakes

I love cupcakes! They are small in size and dun feel guilty eating them. :P and they are cute looking too!!

Ingredients:
- 112g butter
- 70g caster sugar
- 112g self-raising flour
- 1/2 tsp baking powder
- 2 eggs
- 1 tsp vanilla essence

Methods:
- Beat butter and caster sugar until creamy.
- Add eggs and beat.
- Add in self-raising flour slowly and continue mixing.
- Add in baking powder and vanilla essence.
- Spoon mixture into baking cases. (Less than 3/4 full as the cupcakes will rises.)
- Bake in preheated oven at 175C for 20 minutes.

Makes 9 cupcakes.

Results: Not too sweet and soft cakes!
